Recipe Of The Month : Banana Pudding

Ingredients:


1(5 oz) Package of Instant Vanilla Pudding

2 Cups of Cold Milk

1 (14 oz) Can of Sweetened Condensed Milk

1 Tablespoon of Vanilla Extract

1 1/2 Cups of Whipped Cream or 12 oz Container of Thawed Whipped Topping From The Store

1 16 oz Box of Vanilla Wafers

6 Bananas - Sliced


Directions:


In a large bowl, beat pudding mix and milk. Add sweetened condensed milk and vanilla, blend until smooth. Fold in pre-made whipped topping. Layer vanilla wafers, banana slices and pudding mixture in pan. Chill until serving. 

**For more of a crust like bottom : Crush vanilla wafers about 1 1/2 cups mix with 1/3 cup of melted butter. Pat on bottom of pan and bake at 350 degrees for 9 minutes. Cool completely before topping with your pudding and bananas. 

*** Recipe is best chilled for 24 hours, Cover and refrigerate for best results.****

Recipe of the Month : Blackberry Buttercream

Top some delicious lemon cupcakes with this amazing Blackberry Buttercream!

 

Ingredients:                                            (makes enough to decorate for 24 cupcakes)

- 1/2 cup Seedless Blackberry Preserves/Jam
- 1 cup of  Salted Butter, room temperature.
- 1 TSP Vanilla Extract
- 4 Cups of Confectioners Sugar

Directions:

1. Beat butter until light and creamy.
2. Add sugar a little at a time and whip until smooth.
3. Add vanilla and blackberry preserves/jam and mix to make a creamy frosting.
4. Decorate/Spread on cooled cupcakes.

Recipe of the Month- Baked Apple Pie

Homemade Apple of My Eye Pie

-Makes one 9in pie.      -Prep 30min  -Cook 1 hour

Ingredients:             

                                                                                            
  • 1 Double crust pie pastry ( Store bought or homemade)
  • 8 Apples, peeled cored and sliced ( I use Granny Smith Apples)
  • 1/2 cup salted butter
  • 1/2 cup white sugar
  • 1/2 cup packed light brown sugar
  • 1/4 cup water
  • 3 Tablespoons all purpose flour
  • 1 Teaspoon cinnamon
  • 1/3 Teaspoon nutmeg

Directions:


Preheat oven to 425 degrees

Prep apples- peel core and slice apples- to keep them from browning after slicing you can place them  in a bowl of cold water.

Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes. Keep mixture on warm until you are ready to pour it over your apples!

While your sauce is thickening on the stovetop, place the bottom crust in your pan. Remove your apples from the water and toss them with cinnamon and nutmeg. Fill your pie shell with apples slightly mounded.  Cover with a lattice crust.

Gently pour the  warm sugar and butter liquid over the crust. Pour slowly so that it does not run off. Blush the top of the pie with a pastry brush to even. ( Makes a crisp caramelized pastry top!)

Bake 15 minutes at 425 degrees
Reduce the temperature to 350 degrees and continue baking for 35 to 45 minutes.

Serve warm and Enjoy with the ones you love! ( maybe with  a side of Vanilla ice-cream mmmm!)
